The Cane Sugar Harvest for 2008/2009 came to an end in November 2009 and has been a fantastic success for Mauritius in particular.
This crop has provided Billington’s with sugars that have an amazing depth of flavour. When you add these sugars to recipes or simply have Golden Granulated in your tea, you can taste a richness, that we think is unmatchable.
When you taste this year’s crop of Light Muscovado you really can taste the fudge and caramel undertones. It melts in your mouth. Please give it a try, we are sure you will agree.
The beautifully rich molasses, with its dark treacley appearance has also given a colour to Billington’s that makes this different from many other brown sugars. Locking in this molasses, enables Billington’s to capture the flavour that others lose in their refining process.
You will really see this is you use Golden Icing in your butter icing. All your friends will be asking you to share your secret!

Here in the Baking Mad Kitchen we have put our heads together and come up with some new years resolutions we are determined to stick to for 2010.
We thought you might to share these with us……
- Always use our left over flour by mixing different types.
- Always use unrefined sugar where ever possible.
- Cook from scratch where ever possible. Homemade is always best
- Share our baking with the kitchen/friends at least once a week.
- Only buy food from the supermarket we know we will eat/use.
- Do not waste food. Freeze extras and look at use by dates.
