How was your week? Mine was a bit quiet for a change which gave me time to develop new projects and recipes – for Christmas!
The most exciting thing that happened to me last week was receiving the very first copy of my new book – Cox Cookies & Cake in collaboration with Patrick Cox. It looks amazing – it is very glossy, sexy and full of yummy recipes and photography. It’s weird but wonderful to see the final product. On Saturday I ran another fully booked cupcake class which was great fun. Our students are always pleasantly surprised by the champagne afternoon tea that we serve after the class. Whether at home or in my patisserie – I always entertain in style! I hope the students made it home safely with their cupcakes after the bubbles!

A much needed day off on Sunday! I went for a long drive to West Sussex to one of my favourite country pubs The Mulberry Inn www.evanspubs.co.uk which is owned by BBC Radio 2’s Chris Evans. He and his wife are keen bakers – he always raves about their exploits in the kitchen. If his baking is as delicious as the food that is served up in his pub than I have serious competition! The staff are so lovely too – it felt good to be out of the London fast lane for a few hours.
I promised you that Monday’s Baking Mad with Eric Lanlard was going to be a cracking one!
I hope that you enjoyed my visit to Willie’s factory – the only thing missing was the aroma of chocolate and cocoa …bring on ‘smellyvision’! I loved it that we were able to show viewers how chocolate is made – from bean to bars.
In this coming Monday’s episode we are turning a bit exotic! I have been challenged by Chef Vivek of the Cinnamon Club to create a desert as part of their 10 year anniversary celebration menu. The Cinnamon Club is the finest Indian restaurant in the country. We also fit in a visit to the amazing Covent garden market – to see DDP who supply the best quality fruit and vegetables to top London restaurants. The visit to the market helped me to find inspiration for my Cinnamon Club recipe. Look out for the Royal Warrant! We are not the only ones supplying the Royal Family .but Paul at DDP Ltd is so discreet …no gossip to be had there …OK maybe just a little!

So, what did you think of this week’s Baking Mad with Eric Lanlard molecular gastronomy episode? I think the Sainsbury s Baking Club were a little bit shocked but at the same time excited to play with all of the amazing ingredients and techniques. They did very well and I wonder how long before we see some molecular baking kits on the shelf of my favourite supermarket? Maybe Eric Lanlard kits?
There is no reason to be scared of molecular gastronomy. I would recommend everyone to have a go. It is fun and an enjoyable activity to do with the kids and trust me – it is not dangerous …OK, maybe the flamed ice-cream needs to be reserved for adults especially as the recipe includes Calvados! The dairy and egg free chocolate and mint recipe that featured on the show two weeks ago was the most downloaded recipe on bakingmad.com. It is such a great recipe given that so many people have allergy theses days. We did it yesterday for one of our celebrity clients (a Canadian singer) substituting the self raising flour with gluten free self raising flour. It worked very well – so dairy, eggs and gluten free is possible too! there are no excuses not to eat cake …in moderation of course!
If you are a chocolate lover please do not miss next Monday’s show ….it is all about COCAO. You’ll see me visit and work in partnership with the ever so fabulous Willy Harcourt Cozen in his ‘willy wonky’ chocolate factory. Cacao is my favourite ingredient and to be able to see it being made from the beans that come from Willy’s s hacienda in Venezuela to theses precious chocolates bars …….and turning it into a sophisticated chocolate and passion fruit dessert was wonderful. We got our first delivery of British strawberries last weekend (it has been very sunny) so I thought we should do a patriotic strawberry and cream tart with a picture of Her Majesty on white chocolate! I love my job so much!!!

Eric Lanlard star of ‘Baking Mad with Eric Lanlard is hosting Baking Mad classes at his cookery school, Cake-Boy on 1st and 9th June. Don’t you just love the glorious weather we have been basking in over the last few weeks? It’s funny how the all scenery and people change especially in London. Everyone seems to have a big smile on their faces. It is of course the perfect weather for baking as so many opportunities arise like barbecue, picnic or alfresco lunch …let s hope the sunshine lasts.although it’s looking rather grey.from where I’m sitting…
Talking about baking we had a fantastic team of students for our Baking Mad class held at the Cake Boy Cookery School last week. They truly enjoyed their day – taking home all their goodies and of course the fabulous BakingMad .com goodie bag. We are running a few more of theses before our summer break at the cookery school so please do visit the Cake Boy website for dates and booking details. Next week we will release the autumn/winter schedule and the ever so popular Christmas baking class will feature – book early to avoid disappointment.
What did you think of Baking Mad with Eric Lanlard with this week ?? .I felt bad for the baking club – they did such a great cheesecake and then spoiled it by using unripe strawberries . I always taste my fruit before buying – even if I have to open the punnets in the supermarket – theses days you cannot simply rely on the colour or look of the fruit.
I think the baking club forgave me when they realised that it was possible to create delicious and tasty cakes without using eggs or dairy. At Cake-Boy we get asked a lot for dairy and fat free cakes and we always try
to accommodate our customers. Although I am happy to try out recipes for
butter and egg free cakes – I am not switching – fortunately I do not have
any allergies – I love my butter and cream – too much!
Meanwhile the boys from the wheelchair rugby team were really tough and I did look exhausted after training with them ….I hope they do very well in the 2012 Paralympics .
In this coming Monday’s episode de I am surprising our bake club with molecular gastronomy desserts …..a flamed ice-cream which does not melt, some gorgeously pink rhubarb caviar and raspberries pearl that burst in your mouth and of course a lot s of dry iced smoke !!! it was sooo exciting ….I can’t wait for you to see it!

Wow! I knew that the British public liked to bake but I didn’t expect such a response after the 2 screenings of BAKING MAD WITH ERIC LANLARD on both sunny Bank Holidays. in looking after people who suffer from spinal injury. They organised for me to visit the wheelchair rugby team at Stoke Mandeville, the birth place of the PARAOLYMPICS. It was a very inspirational moment to be able to bake with these guys and of course I did end up training with them …and oh god they are tough guys !!! Don’t miss it!
I took a week off to go the the premiere of my friend Paul Feig’s new film in Los Angeles BRIDEMAIDS out in the UK very soon. It’s a great comedy built around the preparations of a wedding, very funny and -naughty. It was a proper glitzy affair with a bright pink carpet instead of the usual red one and then I stayed awake to watch the Royal Wedding. What a beautiful perfect day. The cake looked amazing and really showcased the art of sugarcraft however, it was a bit too old fashioned for me !! I would have prefered to see something a bit lighter. As it happens it was my birthday last Sunday so we celebrated in the Sates. We started in Soho House where it seemed like everybody was a famous actor. I was so excited to meet Mr Mad man himself Jon Hamm plus our very own Matt Lucas who had just
finished a big blockbuster. What a lovely and of course funny guy. Then on the Sunday we had a lovely pool side lunch hosted by my friend Tamie at her fabulous Shangri La Hotel in Santa Monica. It was a great way to finish a relaxing week. I think I had 5 birthday cakes! Is that greedy?!
Holiday and relaxation makes my creative cells work at their best and the Californian sun gave me a boost for new recipes ideas and projects.

I have had amazing feedback on the launch of my brand new series Baking Mad with Eric Lanlard on Channel 4. It seems that the UK has caught baking and wedding fever!
Talking of which, in yesterday’s show you saw how I created my very own Royal/celebration cake and produced a step-by-step guide for Delicious magazine. Hopefully the wedding celebrations continued throughout the Bank Holiday Weekend.
