Chocolate Dipped Cornish Fairings

About the bake

Why not try these delicious ginger biscuits from the beautiful county of Cornwall. Cornish Fairings were traditionally  given by Cornish men to their sweethearts, so why not give one to yours? This recipe is a slight twist on our classic Cornish Fairings recipe with the introduction of mixed peel (candied lemon and orange) and of course some dark chocolate to dip the Cornish Fairings into.

Method

  1. Step 1:

    Preheat the oven to 200C (fan 180C, gas mark 6) and line a couple of baking sheets.

  2. Step 2:

    Sift the flour, salt, bicarbonate of soda, baking powder and spices into a bowl.

  3. Step 3:

    Rub the butter in using your fingertips until the mixture resembles breadcrumbs.

  4. Step 4:

    Stir in the sugar followed by the golden syrup and mixed peel and bring together with clean hands or a mixer to form a dough.

  5. Step 5:

    Roll the dough into 20 large cherry sized balls. Place well apart on lined baking sheets and bake in the oven for 8 - 10 minutes until golden. Cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

  6. Step 6:

    Melt the chocolate and dip half of each biscuit into the chocolate to coat and place on a wire rack to set the chocolate before eating.

    • 120g Allinson's Plain White Flour
    • 1 tsp Salt
    • 0.5 tsp Bicarbonate of soda
    • 0.5 tsp Baking powder
    • 1 tsp Ginger (ground)
    • 0.5 tsp Mixed spice
    • 60g Butter (salted) (cut into small cubes)
    • 60g Billington's Unrefined Golden Caster Sugar
    • 3 tbsp Silver Spoon Golden Syrup
    • 2 tbsp Mixed peel (finely chopped)
    • 100g Dark chocolate
