About the bake
Perfect for your picnic lunch box or an afternoon treat – these mini muffins are just over a mouthful. This Mini Muffin recipe makes Muffins just like you'd get in the supermarket with the added satisfaction of making them yourself. In our experience they are a big family favourite, quick to make and easy to clean up after too.
Method
Step 1:
Preheat the oven to 200°C (fan 180 °C, gas mark 6). Line a mini muffin tin with paper muffin cases.
Step 2:
Cream the butter and sugar together then slowly add the eggs and vanilla extract, mix for three minutes.
Step 3:
Add the flour, baking powder and chocolate chips stir to combine.
Step 4:
Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.
Step 5:
Bake for 20 minutes, or until golden on top. Leave to cool in the tin for 5 minutes, eat warm or cold.

- 110g Allinson's Plain White Flour
- 1.5 tsp Baking powder
- 65g Dark chocolate chips

Very dry and a bit tasteless without the vanilla that others suggested. I added some milk to the second batch but still, not a great recipe. Also, 20mins is way too long. I think maybe 12/13mins gives a better result for mini muffins.
I think the batter was mixed a bit too much, I also added some vanilla extract and also put chocolate melts in the middle of my muffins for a gooey centre. Haven't tried them yet, but 8 minutes in and the most delicious aroma is coming out of the oven. Super practical. Super easy.

Maybe add a tad of vanilla etc. Extract!! Other than that they are the perfect treat to share with your family!
