It's the perfect Summer dessert for a garden party. Method Put the sugar and orange juice into a large saucepan and bring to the boil, stirring until the sugar dissolves. Take off the heat and add the mint sprigs and diced cucumber, cover and leave for about 20 minutes. Strain into a large bowl, removing the cucumber and mint. Add the Pimm’s and stir to combine. Chill in the fridge for about 4 hours or overnight. Churn in an ice cream maker according to manufacturer’s instructions OR place in the freezer, stirring every hour until frozen. This should take about 6 hours. Store in your freezer or serve immediately.
