Is there anything more delicious than a warm fairy cake drizzled in silky sweet icing - the answer is no! These easy to bake fairy cakes are a fluffy treat to make every moment a little more delicious. From birthdays to just because, these mini mouthfulls are perfect to bake with the kids, and even easier to pop in lunchboxes for a mid-week treat for the family. 

Fairy cakes are a great recipe to introduce your children to baking, and are a fun activity for the whole family to enjoy together. In just 25 minutes you'll have made a batch of 12 delicious fairy cakes to decorate however you wish. We love ours drizzled in Silver Spoon Glace Icing, and sprinkled with hundreds & thousands. Simple but oh so scumptious.

Method

  1. Step 1:

    Preheat the oven to 170°C (fan 150°C, gas mark 3). Line a muffin tray with 10-12 paper cases.

  2. Step 2:

    Beat together the butter and sugar, then add in the eggs one at a time mixing between each addition. Add the vanilla extract.

  3. Step 3:

    Carefully fold in the flour until just incorporated.

  4. Step 4:

    Spoon the mixture into the paper cases and bake for 15-20 minutes until golden on top. Insert the tip of a knife into the cases to check that they are baked throughout. If they are ready the knife should be clean when removed from the sponge.

  5. Step 5:

    Allow to cool on a rack.

  6. Step 6:

    To make the icing, add a few drops of water to the icing sugar until the consistency becomes smooth and glossy. Add more water if needed, or if the icing becomes too runny add a touch more icing sugar to thicken.

  7. Step 7:

    Spoon the icing on to each cake and decorate with a handful of coloured sprinkles.

    • 100g Silver Spoon Caster Sugar
    • 100g Allinson's Self Raising White Flour
  • For the Icing

    • 150g Silver Spoon Icing Sugar
    • Handful Sprinkle decorations
