About the bake

A cake you can make in your bread machine! There is no fuss with this Ginger and Marmalade Cake recipe, it really is a case of adding all your ingredients together in your breadmaker and letting it do the work for you. You will need a little saucepan to melt your marmalade, butter, sugar and syrup together but apart from that there is minimal washing up to do.

Method

  1. Step 1:

    Remove the paddle from the baking pan in your bread machine. Line the base with baking parchment.

  2. Step 2:

    Place the butter, sugar, syrup and marmalade in a small pan and heat gently until the butter melts.

  3. Step 3:

    Mix the flour, baking powder and bicarbonate of soda and ginger in a mixing bowl. Add the chopped stem ginger if using.

  4. Step 4:

    Beat the milk and egg together and add to the dry ingredients along with the butter and sugar mixture.

  5. Step 5:

    Pour the mixture into the baking pan and place in the bread machine. Set to bake only mode and set the timer for 45 minutes.

  6. Step 6:

    The cake should be risen and just firm to the touch. Turn out and allow to cool.

    • 75g Butter (unsalted)
    • 100g Billington's Unrefined Dark Muscovado Sugar
    • 75g Silver Spoon Golden Syrup
    • 75g Orange marmalade (extra to glaze)
    • 225g Plain wholemeal flour
    • 1.5 tsp Baking powder
    • 0.5 tsp Bicarbonate of soda
    • 1 tbsp Ginger (ground)
    • 150ml Milk (whole)
    • 1 Egg(s) (free range)
    • 3 Stem ginger (drained and chopped)
