These mini lemon flower tarts are so pretty and easy to make. You can make these really easily using pre-make ingredients lemon curd and puff pastry, or you can make your own from scratch! These mini lemon flower tarts are perfect for parties.

Method

Unroll your puff pastry and use a flower cutter to create mini flowers. Place these in a non-stick mini cupcake baking tin and prick with a fork several times. This will prevent the puff pastry from over-rising at the bottom.

Place a teaspoon of lemon curd within each flower and bake for 15-20 minutes or until golden.

Once baked. Transfer the mini lemon tarts to a cooling rack and leave to cool completely. Dust with icing sugar for decoration.

Storage & Consumption
Store in an airtight container at room temperature and consume within 3 days.
